Abstract
Vitamin E, vitamin C and beta carotene (pro-vitamin A) are essential nutrients which cannot be synthesized in the human body. Each of these nutrients has its own profile of distinct functions. In addition to these unshared functions, these three micronutrients share the capacity to act as antioxidants. As discussed in the introductory chapter, an antioxidant has the ability to stabilize highly reactive, potentially harmful molecules called free radicals. The generation of free radicals has been associated with damage to membranes, enzymes as well as the cell’s nuclear material. The antioxidant’s ability to lower the burden of highly reactive free radicals serves to protect the structural integrity of cells and tissues of the immune system as well as other systems in the body (Machlin and Bendich, 1987).
